Step 3: Bake the cod in the oven.


After the marinating time has elapsed, remove the cod from the refrigerator. Our oven should have already warmed up, so we send the frying pan with cod into it (the oven). We bake for 25-30 minutes.

This method of cooking cod appeared as a novelty in Estonia somewhere in the mid-60s. In fact, cod, due to its availability, cheapness and neutral taste, has always been a popular fish in Estonia. Perhaps only herring and sprat were more popular, but they were seasonal fish in fresh form, and frozen or salted cod were available all year round.
The generally accepted way of preparing cod was to fry it until golden brown in vegetable oil (sometimes with onions) and eat it hot with hot boiled potatoes or even cold the next day. The next most popular method was the subsequent stewing of fried cod in tomato sauce with the addition of a large amount of onions and grated carrots. Such cod in a tomato was served, as a rule, on the festive table in the form of an appetizer.
So, somewhere in the mid-60s, some advanced housewives began to stew fried cod in mayonnaise sauce. This was even before the popularity of the notorious French meat, and this cod seemed to be a terribly tasty and original dish, especially compared to the usual and boring cod in a tomato. No one knew about the horrors that happen to mayonnaise during heat treatment, and therefore they calmly prepared this dish and enjoyed its most delicate taste. Thanks to a long stew in a fatty sauce with a lot of onions and carrots, a simple and boring cod acquired tenderness and sweetness that are usually unusual for it and the taste is rather similar to gefilte fish.
Despite the abundance and availability of different varieties of fish, both fresh and vacuum-frozen, cod is still one of my favorite varieties of fish, and somewhere once or twice a year I am irresistibly drawn to cook it in mayonnaise version. And now, with the approach of the New Year, I have prepared it for our usual nostalgic New Year's table from the times of our childhood and youth. By the way, it always goes with a bang for everyone who tries this dish. It is good and immediately hot with potatoes and cold as an appetizer.
Atlantic cod (Atlantic cod - Gadus morhua) is optimal for this dish, but due to its inaccessibility, I often use Pacific cod (Pacific or Alaskan Cod - Gadus macrocephalus) instead. However, in terms of texture and taste, these fish do not differ too much and are quite interchangeable. I usually buy cod in the form of frozen fillets and thaw them slowly in the refrigerator for 2-3 days.
Thawed cod should be thoroughly blotted with paper towels, salt, you can pepper with ground white pepper, roll in flour and fry for light ruddy in vegetable oil. I usually use corn oil for this.
While the fish is fried, grate a few peeled carrots on the largest grater and cut into 4 parts, and then a large onion into thin quarter-circles. The volume of onions, carrots and fish should be approximately the same. Put mayonnaise in a separate container and, constantly stirring with a fork, gradually add double the volume of milk to it. Add salt to taste. There should be enough sauce so that the fish and vegetables filled with it are almost covered with it.
Place half of the onion and carrot in the bottom of a heavy bottomed saucepan. Put fried fish on them. Put the second half of the vegetables on the fish and pour it all over with a mixture of mayonnaise and milk. Place over medium heat, cover and bring to a boil. At the same time, the onions and carrots will settle, give some of the juice to the sauce, and as a result, everything will be immersed in the sauce.
Reduce the heat to the weakest and simmer until the onions and carrots are soft. It takes 2-3 hours. In the process of stewing, you need to taste the sauce for salt and add salt if necessary. You can eat it immediately hot, or you can, as I plan to do, cool it and serve this fish on the table as a cold appetizer.

You can make a lot of healthy and tasty dishes from cod fillet in the oven. This product does not need to be cut, it is prepared quickly, which facilitates the work of the hostess in the kitchen. Slightly dry cod, when properly prepared, becomes tender and juicy.

  • To reduce the content of certain mineral salts in fish, which are not very useful in large quantities and can give the dish a bitter aftertaste, the thawed carcass can be placed in milk for an hour or two. However, there is no great need for this.
  • Even if you do everything right, but overexpose the fish in the oven, it will eventually turn out to be tough and dry. Therefore, the cooking time indicated in the recipe should not be exceeded.
  • Cod is not a highly fatty fish, so with sour cream it turns out to be especially tasty. Moreover, the fatter the sour cream, the tastier and more tender the baked cod will turn out. It will be even better if the fish is marinated before cooking.

It is necessary to follow the technology of cooking cod in the oven, but this is not enough for the finished dish to have an impeccable taste. Of great importance is the choice of spices and herbs. White and black pepper, thyme, rosemary, parsley, dill, basil go well with fish. Lemon zest also gives a pleasant aroma to the dish.

Cod under cheese coat


Ingredients:

  • cod fillet - 1 kg;
  • onion - 1 head;
  • boiled champignons - 1 can (300 ml);
  • hard cheese - 80 grams;
  • mayonnaise - 3 tablespoons;
  • raw egg - 1 piece;
  • salt - two pinches;
  • spices - to taste;
  • vegetable oil - 2 tbsp. for a baking sheet, 2 for roasting).

The recipe for cod fillet with cheese in the oven is as follows:

Prepare the fish in the usual way, that is, rinse and dry. Grate with spices and salt. Chop the peeled onion into half rings. Fry in a hot pan until translucent. Mushrooms, if whole, chop finely and, adding to the finished onion, fry for a couple more minutes. Put the fish on a greased baking sheet, and put the mushrooms and onions on top so that you get a layer. Mix mayonnaise with egg. Grate cheese, preferably fine. Cover the fish with a layer of cheese, and pour the mayonnaise-egg mixture on top.

Preheat the oven to 180 degrees and place the sheet with the prepared fillet there. Bake at the indicated temperature for 20 minutes. The cheese under the filling will melt, and the filling itself will thicken and grab a crust. Get a fish under a fur coat.

It is best to serve this cod fillet whole on a large platter. Put boiled round potatoes around the fish, decorate with herbs.

Cod fillet with vegetables in the oven

Ingredients:

  • Cod fillet - 100 gr.
  • Onion - 15 gr.
  • Carrots - 15 gr.
  • Zucchini - 15 gr.
  • Tomatoes - 20 gr.
  • Soy sauce - 1 tbsp. l
  • Dill - 2 gr.
  • Sunflower oil - 1 tbsp. l

Cooking method

Prepare the products on the list: cod, zucchini, onions, carrots, tomatoes, soy sauce, sunflower oil, dill seeds. I have cod in such a piece, you can immediately take the fillet. Clean vegetables and cut into thin slices. Separate the fillet from the bone in the cod.

Cut the fillet into portioned pieces (2 per serving, the calculation of products is given for 1 serving). Marinate in a mixture of soy sauce and sunflower oil, adding fresh dill seeds, leave for 15-20 minutes.

Lay a layer of onions on a square piece of parchment, put carrots and zucchini on it, sprinkle with oil. Place cod fillets on top. Wrap the parchment with an envelope and send it to the oven preheated to 180-200 degrees for 15-20 minutes. It is better to put the envelopes in a baking dish. After the time has elapsed, check the fish and vegetables, and the readiness will already be clear from the delicious aroma that has spread.

Ingredients:

  • Cod fillet - 600 grams
  • Potatoes - 600 Grams
  • Broccoli - 400 grams
  • Egg - 2 Pieces

  • Fresh greens (parsley, dill)
  • Salt, pepper to taste

Cooking:

  1. Rinse the fish fillet, cut into small pieces, salt, pepper, sprinkle with spices

  3. Finely chop the garlic and sprinkle over the fish.

How to cook a tasty fillet

Before cooking, the fish must be thawed, it is advisable (and best of all) to do this in the refrigerator in advance. Last but not least, at room temperature. I had a cod fillet from the Barents Sea in Agama packaging, as in the photo, indeed, as stated by the manufacturer, without ice glaze. After defrosting, the cod fillet remained dense, white in color with a slightly pink tint.

Before cooking, cod fillets need to be salted (I used coarse sea salt) and pour over the marinade. I prepared a marinade for fish from vegetable oil, lemon juice, grated garlic and aromatic herbs.

I salted the cod and poured the marinade directly into a deep baking dish. So there are fewer dirty dishes, and the fish will remain juicy when baked.

Marinated cod should stand for at least 15 minutes. If you want to serve this dish hot for the arrival of guests, you can marinate it in the refrigerator for much longer and put it in the oven at the appointed time.

Baked cod fillets will cook very quickly in the oven. The temperature in a preheated oven is 170-180 degrees, the cooking time is 15-17 minutes.

Cod with onions and carrots in the oven is incredibly tasty. Just two vegetables are enough to make a wonderful dish.

Ingredients:

  1. A kilogram of cod.
  2. Carrots - 5 pcs.
  3. Salt.
  4. Black pepper.
  5. Four bulbs.
  6. Mayonnaise - 90 g.

This dish is quick and easy to prepare. Cooking should start with the preparation of vegetables. They need to be cleaned and washed, then finely chop the onion, and chop the carrots on a grater, which is used to prepare Korean salads.

Ingredients:

  1. Kilogram fillet.
  2. A small head of cabbage (cauliflower).
  3. Hard cheese - 220 g.
  4. Vegetable oil.
  5. Egg.
  6. Onion - 1/2 kg.
  7. Tomato paste - 60 g.
  8. Milk - 170 g.
  9. Carrot - 350 g.

Preheat the oven to 190 degrees. Coarsely rub the peeled carrots and finely chop the onion. Then fry the prepared vegetables in vegetable oil until a slightly golden hue. We transfer the finished frying to a baking dish with high sides.

We wash the fillet under water and dry it with paper towels. Cut it into small pieces and spread a layer on vegetables. Salt and add pepper on top of the dish. We send the form for fifteen minutes in the oven.

And we ourselves prepare cabbage there for a while, disassembling it into separate inflorescences. We wash the vegetable and boil for ten minutes, then drain the broth and finely chop the cabbage.

In a separate container, mix the egg and milk, add salt and tomato paste. Beat the mass until smooth. We take the fillet out of the oven and spread the cabbage on top, pouring it with an even layer of the egg mixture. Then pour in the grated cheese. Next, send the form to the oven for another thirty minutes. As soon as a golden crust appears on top, the fish is ready, it can be served on the table as an independent dish.

Cod with vegetables and sauce

You can cook cod in the oven under carrots and onions with the addition of sauce. This fish is very juicy and tasty.

Ingredients:

  1. Cod - 0.7 kg.
  2. Ground pepper.
  3. Two bulbs.
  4. A teaspoon of sugar.
  5. Cream - 230 ml.
  6. Flour - 30 g.
  7. Sunflower oil.
  8. Dill greens.
  9. Tomato juice - 230 ml.

We clean the onion and cut it into rings, and chop the carrots on a grater (use a grater for Korean carrots). We cut the thawed cod into steaks. Pepper and salt the fish, and then coat in flour. In a hot skillet, fry the steaks in vegetable oil until golden brown.

In a separate container, mix cream and tomato juice, not forgetting to add sugar, salt and black pepper. Pour this sauce on top of the dish and send the form to the oven. The fish is baked for half an hour. Sprinkle the finished dish with chopped dill. It can be served with a salad or side dish.

Fish in foil

  1. Cod - 0.4 kg.
  2. Two carrots.
  3. White and black pepper.
  4. Salt.
  5. Two bulbs.
  6. Parsley greens.

Wash the cod carcass and cut into portions, separating the fillet from the ridge. We clean the onion and chop it in half rings, and rub the carrots. Preheat the oven.
