In a separate bowl, mix with mayonnaise, and then spread the resulting mass on a large plate in the form of a drop (the base of the future “hedgehog”). You can adjust the portion of mayonnaise yourself, taking into account personal preferences, but it is advisable not to save much sauce so that the salad does not turn out dry.
  6. After draining the marinade, lay the mushrooms on top of the chicken layer (we set aside a few mushrooms to decorate the salad). Leave this layer without mayonnaise.
  7. Next, distribute the eggs, sprinkle lightly with salt / pepper if desired, and then apply a thin layer of mayonnaise.
  8. We cover the egg layer with cheese, not forgetting to keep the shape of the salad. Lubricate all the cheese chips with mayonnaise, with the exception of the front part, which will serve as a “hedgehog muzzle”.
  9. We spread Korean carrots on the surface of the salad, hiding all the previous layers under it. We leave only the “hedgehog face” open. It will take a couple of hours for the salad to be completely soaked, so after cooking we send it to the refrigerator shelf.
  10. Before serving, we decorate the salad so that it becomes more like a “hedgehog”. We form “eyes” and “nose” from olives, put several pickled mushrooms on the “needles”, and put parsley leaves on the edges of the plate to simulate grass. As a dressing, it is best to use plastic and light formulations. “But what about mayonnaise?!” - you ask. In terms of consistency, it is the most convenient. If it is not in other dishes of the children's holiday table, then you can go on about the comfort of the hostess.

However, when choosing homemade mayonnaise in an effort to protect yourself from preservatives and stabilizers, remember that it is much worse stored than purchased. This means that the salad cannot be seasoned and formed in advance by keeping it in the refrigerator for several hours before the guests arrive.

Alternative dressing option: twist any raw soaked nuts in a blender to a homogeneous mass, add garlic and lemon juice to taste.

Or we will make a more sophisticated version - with chopped olives. Then we need to cut each olive into quarters or eighths and stick skin up into the formed mass of lettuce.

A curious option for needles for a hedgehog for a summer and spring birthday can be cucumbers. The emerald green color of the rind and a bit of fiddling with carving the "needles" are worth the resulting effect of bright personality for the center of gravity of the festive table.

To prepare the needles, cut the cucumber into circles 5-7 mm thick, each circle in half. From the resulting halves we form rows of needles, sticking the slices vertically at an angle of 45-60 degrees.

Apricots, raisins

A fruit hedgehog is suitable for needles made from dense apricots. The principle of cutting and decorating is the same as for olives.

Dark raisins, well washed and soaked, will also be a convenient material for fruit salad needles, since they do not require cutting.

Nut, seeds

You can use almonds. If you stick it with the edge up, we will get a finished shape for a needle without pre-cutting. Such a hedgehog is only suitable for a schoolchild's birthday. Salad can also be fruity.

But we need not the usual fried almonds, the hardness of which is great, but raw, soaked overnight. So it becomes the most useful, easily digestible and soft enough for a children's salad. For the colorfulness of the hedgehog, we will have two different colors at our disposal. Light yellow when peeled from almonds. And brown if used with skin.

Such needles can also be used to decorate any other children's dish. We have this - a banal oatmeal.

Similar to almonds, large shelled sunflower seeds can be used. Although in this case there will be more fuss with the neat design of the needle surface.

Treating a child's birthday is always an increased responsibility. It's one thing to be known as a careless hostess among adults who suffered a slight indigestion after a home holiday.

And it is quite another to seriously harm the child's friends with stale food or heavy recipes. This is usually much more difficult to forgive the parents of children, which threatens the comfort of our child in the established children's company.

Let's take a closer look at simple salad recipes, where there are no exotics, a turbulent mixture of ingredients and an excess of heavy dressing.

  • Boiled potatoes - 3 pcs. medium size;
  • Hard boiled eggs - 4 pcs.;
  • Boiled carrots - 3 pcs. medium size;
  • Nuts (walnuts or almonds) - generous harvest;
  • Pickled mushrooms (honey mushrooms, chanterelles, champignons) - 100-150 gr, to the taste of the hostess;
  • A couple of whole pickled porcini mushrooms;
  • Mayonnaise for dressing - 4 tablespoons, without a mountain;
  • Dark olives for decoration - 3 pcs.

Cooking

  1. We cut 2 carrots, all the potatoes, mushrooms and eggs into a small cube.
  2. Chop 2/3 of the nuts with a knife to the size of a wheat grain
  3. Chop the remaining third as finely as possible.
  4. We cut 1 carrot into sticks of the same length - these are future needles.
  5. We combine salad ingredients and season with mayonnaise.
  6. We form the mass on a dish into the body of a hedgehog, gently smoothing it.
  7. Chop with the remaining nuts. We make needles from boiled carrots or olives. And as a trophy, we put white pickled mushrooms, cut into halves, on the hedgehog.
  8. For the eyes and nose of any olive - whole or part.

In the process of mixing any salad, you should try it for sourness. The maximum number of ingredients in a children's salad is 5 pcs. Therefore, we can enhance the taste by adding sour apple or pickled cucumber.

Ingredients

  • Hard-boiled eggs - 2 pcs.;
  • Apple - 1 pc. medium size;
  • Boiled chicken fillet (thigh) - 300 gr;
  • Hard cheese without inclusions - 150 gr;
  • Fresh cucumbers - 4-5 pieces, not small;
  • Sour cream with a fat content of 20% or mayonnaise - 4-5 tbsp. l.;
  • Olives for decoration - 3 pcs.

How to make a salad

  1. Put half of the cheese in the freezer for 5 minutes.
  2. Separate the chicken meat from the bone and cut into small cubes.
  3. Grind the eggs and apple in the same way.
  4. The remaining cheese is three on a coarse grater.
  5. Having set aside 1-2 cucumbers for decoration, chop the remaining vegetables into thin strips, for example, on a burner grater. We do the same with an apple, after which we sprinkle it with lemon juice so that it does not darken.
  6. We lay the ingredients in layers, smearing each layer with dressing and at the same time forming a hemisphere for the hedgehog's body: meat, apple, cheese, cucumbers, eggs.
  7. We grind the surfaces with cheese, for this we rub a piece on a fine grater that has been cooled in the freezer. We make needles from half slices of cucumber, eyes from olives.

Ingredients

  • Eggs - 3 pcs
  • Cauliflower - 3 medium sized florets
  • Pitted dark olives - about 150-200 gr
  • Hard cheese without inclusions - 150 gr.
  • Korean carrots, lightly peppered, freshly bought - 100 gr.
  • Greens (parsley, dill) - 2-3 sprigs
  • Light mayonnaise - 2 tbsp. l.


Cooking

  1. We interrupt eggs, cauliflower, 4-5 olives and greens in a blender, add salt and prepare a steam omelette with a diameter on the plate where we put our hedgehog;
  2. Three cheese on a coarse grater;
  3. Having set aside 10-12 olives for decoration, we interrupt the remaining ones in a blender until smooth and add 1 tablespoon of mayonnaise;
  4. Korean carrots are cut along the threads into segments 2-3 cm long;
  5. We put the finished omelet on a plate. Lubricate 1 tbsp. a spoonful of mayonnaise;
  6. Then a mass of olives, after - grated cheese.
  7. We form a hemisphere and coat with 1 tablespoon of mayonnaise. Gently sprinkle chopped Korean carrots on the hedgehog's body (3/4 of the surface), leaving the muzzle uncovered.

Decorate with needles from whole or chopped olives. The eyes and nose are also olives.
